{"id":540,"date":"2011-07-02T19:25:24","date_gmt":"2011-07-03T00:25:24","guid":{"rendered":"http:\/\/www.shirlsu.com\/?p=540"},"modified":"2013-05-29T15:03:54","modified_gmt":"2013-05-29T20:03:54","slug":"more-harvesting-and-canning","status":"publish","type":"post","link":"http:\/\/www.shirlsu.com\/?p=540","title":{"rendered":"More harvesting and canning"},"content":{"rendered":"<div id=\"attachment_546\" class=\"wp-caption alignright\" style=\"width: 263px\"><a href=\"http:\/\/www.shirlsu.com\/wp-content\/uploads\/2011\/07\/more-canning1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-546 \" title=\"more canning\" alt=\"\" src=\"http:\/\/www.shirlsu.com\/wp-content\/uploads\/2011\/07\/more-canning1.jpg\" width=\"263\" height=\"330\" \/><\/a><p class=\"wp-caption-text\">More Canning<\/p><\/div>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #000000;\">The garden continues to amaze me with the amount of veggies it is providing.\u00a0 I spend many hours each week harvesting and canning as I ignore housecleaning.\u00a0 The garden offers the perfect excuse!<\/span><\/p>\n<p><span style=\"color: #000000;\">Thankfully, we were able to purchase the high-efficiency small freezer I wanted and it&#8217;s now over 1\/2 full of various fresh peas.\u00a0 I&#8217;ve put up 30 quarts of snow peas, purple hulls and cream peas and the cream peas plants continue to produce.\u00a0 I&#8217;ve saved room for late-producing okra and for corn I hope to purchase at the farmers&#8217; market.<\/span><\/p>\n<p><span style=\"color: #000000;\">After putting up 12 quarts of dill pickles, 12 pints of sugar-free bread and butter pickles and 10 pints of sugar-free sweet relish, I&#8217;ve decided to concentrate my energies on canning the bumper crop of tomatoes the garden is providing.<\/span><\/p>\n<p><span style=\"color: #000000;\">Our windowsills and tables are filled with ripening tomatoes and thus far, I&#8217;ve canned 40 quarts.\u00a0 It appears I will meet and exceed my goal of canning 52 quarts of tomatoes this season.\u00a0 If we continue experiencing occasional rains as we did today, the plants will produce enough tomatoes I might be able to put up some chunky green tomato relish too.\u00a0 I&#8217;m also hoping to pressure can some tomato gumbo (whole tomatoes with okra, bell peppers and onions).\u00a0 Tomato gumbo heated with a few shrimp served over jasmine rice is an easy family favorite.<\/span><\/p>\n<p><span style=\"color: #000000;\">Shirl<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; The garden continues to amaze me with the amount of veggies it is providing.\u00a0 I spend many hours each week harvesting and canning as I ignore housecleaning.\u00a0 The garden offers the perfect excuse!
